Gluten Free Arugula Spinach Fettuccine
I am Italian and love my pasta but I had to switch to a gluten free lifestyle 5 years ago when I found out that I’m gluten sensitive, not Celiac but it does cause tiredness and brain fog and overtime wears down the digestive lining leading to gut issues. It was really challenging at first. All my favorite foods and childhood comforts were on my avoid list. The special treats I shared with my Nonna were now something I had to find alternatives for. To be honest I went back and forth with a gluten free lifestyle thinking I could just eat it once in awhile until I had to admit to myself I felt a lot better without it. I had more energy, a clear mind, and no digestive disturbances. So now I stick to this way of life, but that doesn’t mean I don’t crave all the foods I once enjoyed so much. A lot of the gluten free products out there have so much added salt and sugar to make them taste better which doesn’t make it a healthy alternative. So I read packages carefully and opt for minimal ingredients and enjoy making my own gf goodies. I love my pasta and I am always looking for healthier alternatives. I really enjoy adding nutrient dense foods that also deliver a nice flavor profile. Which is why I enjoy making arugula pesto. Arugula is so tasty, beautifying for the skin and aids in detoxification.
Here’s how to make it . 4 oz arugula 2 ounce grated Parmesan Cheese 2 oz grated Pecorino Cheese 1/2 cup extra virgin olive oil 2oz Pine nuts 4 cloves garlic Salt/Pepper to taste Add all ingredients into blender and blend well Mix with your your favorite pasta. Mine is from a local shop that makes handmade pasta and now has gluten free. . I hope you enjoy this simple and delicious recipe as much as I do. It stores well I. The fridge for a couple weeks. You can also freeze it. I love to put it in ice cube trays and pop 1-2 out for single serving dishes.
