Recipe


Dill Sauce

  • 1/2 cup nut milk

  • 1 bunch dill without stems

  • 1/2 bunch Italian Parsley without stems

  • 4 tbsp. Olive oil

  • 4 tbsp. Apple cider vinegar or Champagne vinegar

  • 4 scallions

  • Salt & pepper to taste

  • Mix all ingredients into a blender and blend well


This amazing dill sauce is nutritious, delicious, and versatile. It can be used as a salad dressing, dip for veggies, crackers, chips, and even to saute your favorite veggies. It is a flavorful sauce that can make eating healthy snacks more enjoyable.



Zucchini Noodles

  • Spiralize 2-3 medium zucchini

  • Place in bowl

  • Pour dill dressing on top

  • Add fresh cherry tomatoes on top

  • Add a bit of cheese or nuts on top if you like


Zucchini noodles can also be enjoyed hot. Simply add the dill sauce to a warm pan and add the noodles. Toss well for one minute, and enjoy!


Kids love zucchini noodles; it is a fun way to encourage them to eat healthier foods. Something about the fun spiralized noodles makes it more enjoyable. If they are up for it you might even let them try their hand at making the recipe with you.
