Dill Sauce
1/2 cup nut milk
1 bunch dill without stems
1/2 bunch Italian Parsley without stems
4 tbsp. Olive oil
4 tbsp. Apple cider vinegar or Champagne vinegar
4 scallions
Salt & pepper to taste
Mix all ingredients into a blender and blend well
This amazing dill sauce is nutritious, delicious, and versatile. It can be used as a salad dressing, dip for veggies, crackers, chips, and even to saute your favorite veggies.

Zucchini Noodles
Spiralize 2-3 medium zucchini
Place in bowl
Pour dill dressing on top
Add fresh cherry tomatoes on top
Add a bit of cheese or nuts on top if you like
Voila, you're done.
