Cinnamon Ginger Collagen Energy Bites



Do you ever crave something sweet midday, but it ends up leaving you feeling tired and bogged down? I completely understand because I have been there.


I used to be addicted to sugar and would eat large amounts of it every day. Looking back on it, I can't believe how much I consumed and how lousy I felt afterward. My sweet tooth didn't magically go away; I just learned how to create recipes that tasted good, were low in sugar and provided energy, and were healthy.


Sugar is a significant factor in aging skin. It breaks down collagen in a process called "glycation." (AGE's) When we consume a diet high in sugar or high glycemic foods, the sugars react with proteins and fats that cause our skin to age. The reaction causes elastin and collagen to become weak, and our skin shows more visible signs of aging.


To combat this, I always suggest being mindful of how much sugar we are consuming on a daily basis. Sugar lurks in many foods, and if we can reduce our daily intake, we can prevent unnecessary signs of aging skin.

Ingredients

  • 3/4 cup organic pitted dates

  • 1 cup organic almonds (raw)

  • 1/4 cup cashews (raw)

  • 1 tsp ground Cinnamon (I prefer Ceylon cinnamon because it has a higher concentration of antioxidants)

  • 1 tsp ground ginger

  • 1 tsp vanilla extract

  • 1/4 tsp sea salt

  • 2 Tbsp collagen powder


Directions


1.) Add all ingredients into a food processor and blend until well mixed and sticky.


2.) Form into even medium size balls with your hands. It is easier to roll into perfect balls if your hands are slightly wet. Keep a cup of water near you to wet your hands when they get dry.


3.) Chop up some almonds and roll the energy bites in them for a delicious crunch.


4.) Store in the fridge or freezer in an air tight container.
