
Its the perfect time of year for dense warming foods. As our bodies adapt to the change in seasons our nutritional needs change as well. Fall/Winter months are a great time to ditch the salads or smoothies and pick up foods that will ground us and keep us warm. During the cooler months are our bodies require more energy to keep warm and functioning optimally. It is important to eat filling foods to sustain energy levels throughout the day. Your body is very smart and this is a basic survival method. With that being said, the quality of the foods you eat makes a difference in how you will feel.
I like to suggest eating foods that are flavorful without taking away energy stores. A lot of times its easy to consume foods with a lot of sugar for a quick energy boost. But you will find that they will leave you feeling less than fabulous shortly thereafter and craving more food. Food that is rich in nutrients without being high glycemic (high in sugar) are a better option to achieve a healthy mood and sustained energy.
With that being said I created a healthy gluten free banana bread recipe that will fill you up without weighing you down. Its very simple to make and tastes delicious.
What you will need:
Ingredients:
4 small/med very overripe bananas
4 large eggs room temp
2 tsp pure vanilla extract
1/4 cup coconut oil melted and room temp
2 1/4 Gluten Free All Purpose Flour I used the brand Cup for Cup
1 cup chopped walnuts
1/2 tsp baking soda
1/2 tsp baking powder
1 tsp cinnamon
Instructions:
1.) Preheat oven to 350 degrees F
2.) Whisk together all wet ingredients in a bowl until well combined 3.) Slowly stir the dry mixture into the wet. You will want to do this by hand until there are no lumps. Do not use an electric mixer it will prevent the batter from rising properly. 4..) Pour mixture into greased baking dish. I used a small glass pyrex baking dish
5.) Let bake for 45 minutes until golden brown. Use a toothpick or fork to insert into the center of the loaf of bread to ensure it is fully baked. If it comes out clean with no wet batter it is ready to be removed from the oven. Allow to cool for a few minutes. You can then have a slice or two!
