You know those delicious fruit roll-up treats you loved as a kid? Well, you can make a healthier version of them without the excess sugar and food coloring. They taste amazing! Plus, you only need two ingredients, strawberries and lemons.
I grew up eating fruit roll-ups all the time so I was really excited to make a healthier version of my childhood treat.
10-15 medium strawberries
Juice of 1/2 lemon
Set oven 175
Cut up strawberries and add to a blender along with lemon juice. Blend until smooth
Pour liquid into a pan on low heat and simmer to thicken it up. Continuously stir until thick. You want to make sure as much water as possible is evaporated.
Once thick enough, remove from heat and add mixture onto a baking sheet lined with parchment paper.
Spread the mixture evenly.
Place in oven. You will cook for around 3 hours. Every 30 min turn the baking sheet so it cooks evenly.
After 3 hours, remove from the oven and let cool
Roll the parchment paper into a roll lengthwise and cut into 1/2-inch circles.
You now have fruit roll-ups! Enjoy!!
